Our Sustainability Statement
At Peak Edge Hotel and Red Lion Restaurant, sustainability is part of who we are. Set on the edge of the glorious Peak District, our four-star independent hotel, restaurant and wedding venue is designed to offer a true escape from the everyday, combining relaxed luxury, warm hospitality and genuine connections to our surroundings.
Our mission is to provide the perfect space to eat, drink, sleep and celebrate, while making thoughtful choices that support our people, our guests, our suppliers, our local community and the planet.
While we are proud to deliver quality, comfort and memorable experiences, we also believe that good hospitality should be responsible hospitality. We do not believe in a “win at all costs” approach. Instead, we are committed to building a business that values people, protects place and continues to make positive progress.
Our owner, Steve Perez, says:

You can’t ignore the hotel and hospitality industry’s impact on both people and the planet, particularly around water usage and energy consumption, so we cannot ignore our role in helping to build a more sustainable future. Our employees play a crucial role in this journey, and we value their contributions immensely.”
For us, sustainability is not only about the environment. It is about doing good business, supporting our team, working with local suppliers, reducing our impact where we can and continuing to improve year after year.
Environmental Initiatives
Energy Efficiency
We are actively working to reduce our energy consumption across the hotel and restaurant. This includes the use of energy-saving technology such as LED lighting, key card energy savers and motion sensors in public areas. At our Walton Lodge Farm Estate, we also have a biomass boiler, helping to further reduce our carbon footprint.
Water Conservation
We use water-saving fixtures throughout the hotel, including aerated showerheads and dual flush toilets. We also encourage both guests and team members to support water conservation through initiatives such as towel reuse and linen replacement every other day during extended stays.
Waste Reduction
We are committed to reducing waste wherever possible. This includes reducing single-use plastics, introducing compostable alternatives and using Noble Isle bulk toiletries to reduce plastic packaging. Our approach to waste focuses on reducing, reusing and recycling wherever we can. Our bottled still and sparkling water is also supplied by Crag Spring Water, an award-winning Peak District supplier with a strong focus on sustainability.
Sustainable Sourcing
Local and Seasonal Produce
Our menus are designed around seasonal ingredients and locally sourced produce wherever possible. We are proud to work with trusted suppliers, while also using produce from our own 360-acre Walton Lodge Farm Estate. Over 90% of our produce comes from the UK, with many ingredients sourced from local suppliers such as The Bakewell Bakery, Peak Ales and The Mushroom Emporium. This helps us support local businesses, reduce food miles and celebrate the best of Derbyshire.
Eco-Friendly Products
We choose suppliers who share our values and demonstrate strong sustainability standards, from cleaning products to food and drink. Our housekeeping team has reduced the use of harmful cleaning products on site, and we continue to review the products we use across the business. Where possible, we also highlight provenance and sustainable credentials on our menus.
At Peak Edge, our water comes from a local borehole. It is treated at source in a water treatment plant, then piped directly to Peak Edge, where it is UV treated in our cold water storage tank. This reduces infrastructure requirements and the environmental impact associated with transporting water.
Supporting People
Supporting Local Communities
We are proud to be part of our local community and visitor economy. We actively support local charities, associations and schools through initiatives such as work placements and community partnerships. We are also active members of Visit Peak District & Derbyshire and are featured on the North East Derbyshire Food and Drink Trail.
Supporting Employees
Our team is at the heart of our business. Across Peak Edge Hotel and Casa Hotel, we provide around 200 jobs locally. We are committed to supporting our employees through training, development and a positive work-life balance. Recent improvements include an increase in annual holiday allowance, enhanced food and drink discounts and access to Westfield Health for contracted team members. All employees are paid above the National Living Wage.

Carbon Footprint Reduction
We are committed to continuing to reduce our carbon footprint through ongoing improvements in energy efficiency and the adoption of renewable energy sources.

We are proud to have achieved Green Tourism and Green Meetings recognition, which reflects the positive steps we are taking across our hotel, restaurant and event spaces. These certifications support our ongoing journey and help guide future improvements across people, place and planet.
