Our Heritage
The Red Lion has stood at the heart of Stone Edge for more than two centuries, evolving from its early roots in the Derbyshire countryside into the distinctive restaurant at the centre of Peak Edge today. It’s original stonework, oak beams and historic character remain part of the experience, preserving a strong connection to the landscape and community around it.
Across generations, the Red Lion has welcomed travellers, local families and guests gathering to dine and celebrate. Today, the tradition continues through refined interiors, attentive service and a contemporary approach to Peak District dining, creating a setting that feels established, elegant and quietly individual.

Our Food Philosophy
Seasonal Peak District Dining
Our menus are shaped by the seasons and inspired by the landscape surrounding Peak Edge. Working with carefully sourced ingredients, local produce and trusted suppliers, our chefs create dishes that feel refined, generous and closely connected to the Derbyshire countryside.
From comforting favourites and lighter plates to fresh seafood, thoughtfully prepared mains and indulgent desserts, each menu reflects what is at its best throughout the year. The result is a dining experience that feels considered, distinctive and rooted in a true sense of place.
Farm-to-Table Inspiration
Our food story begins just a few miles from the Red Lion kitchen at Walton Lodge Farm Estate, a 360-acre working farm on the edge of the Peak District.
Home to Belted Galloway and Highland cattle, Dorset sheep, Berkshire pigs, free-range chickens and honeybees, the farm supplies selected meat, eggs, honey and seasonal produce to the restaurant. This close connection gives our menus a genuine sense of place, rooted in quality, provenance and the Derbyshire countryside.
Our chefs use these carefully reared and grown ingredients to create generous, refined dishes that allow each element to speak for itself. The result is thoughtful farm-to-table dining shaped by the seasons and inspired by the landscape around us.
Wines Chosen with Care
Wine at the Red Lion is designed to be explored, not simply selected from a list. Our bespoke, temperature-controlled wine cellar allows guests to step inside the collection, discover bottles up close and learn more about the people, regions and stories behind each label.
Created by Sorrells, whose portfolio includes renowned luxury hotels and restaurants, the cellar combines softly lit oak shelving with advanced climate control to preserve every bottle in optimum conditions. Its collection ranges from approachable favourites and popular magnums to celebrated vintages, including rare and distinctive bottles.
Our knowledgeable team is on hand to answer questions, suggest thoughtful pairings and help guests find a wine that complements both the menu and the occasion. The cellar also plays a central role in the Red Lion Wine Series, bringing together carefully selected wines and dishes inspired by regions from around the world.
